We are going to be adding down the road a searchable "Record Last Updated By ____" field, which will not be editable by any user unless they make a change to a contact record.  That will allow you to see what records they've edited in a certain time frame, but as for right now I can't think of a great way to do this.

The only thing I can think of is to copy all of the data when viewing the calendar as a list.  Highlight everything starting at the "What" column, including the word "What", like this: http://screencast.com/t/yrY19rfJd and then paste it into Excel.  You may need to adjust the height of the rows, and manually change some if the Details of a To-Do spills over one line of text, but it may get you headed in the right direction: http://screencast.com/t/E0jvd6FJlkO7.
